One Pot Lasagna

 I added extra water and used 2 jars of sauce.  You can use a mixture of Italian sausage and ground beef as well as just using one or the other. It’s your preference. Make sure the olive oil you used is a good one. Infused olive oils can be tricky. I use ORO from Wisconsin.  I use Prego pasta sauce. I used 1 jar of water and kept adding as needed. Ingredients  1/2- 1 lb Ground beef  1white onion, chopped 3-5 cloves garlic ,sliced 2 Tbsp of herb infused olive oil 2 jars either marinara or pasta sauce Water 1pkg lasagna noodles, break in 1/2 2 cups ricotta cheese 16 oz big shred mozzarella  Basil chopped Grated Parmesan  First brown beef(sausage if using), onion and garlic in infused oil in a large double handled pot.  Add sauce, water and noodles. Make sure the liquid covers all the noodles add more water if needed. Cook on medium heat (boiling) for 20 minutes and test noodles, depends on how well done you like them add more time or remove. 🍋Lemon Cheesecake Tacos🍋

 You can make the filling and either do these fun tacos or just put in a ramekin.  Make the shells from flour tortillas find gluten free shells if you need to, Make it easy for you. I bought a canned pie filling and opted to not make the compote from scratch but you can.  I wanted to make it an easy dessert. You can use a piping bag the pipe the cheesecake filling or you can use a Ziploc bag and cut off the corner and squeeze it out that way.  Ingredients for shells Large flour tortillas  Cinnamon and sugar mix Oil Cheesecake Filling 8oz cream cheese softened  1 cup heavy cream Zest from 1 lemon 1/4 cup lemon juice, fresh if possible  1/2 cup powdered sugar  Canned cherry, blueberry.. pie filling  Use a biscuit cutter to cut circles out of tortillas . Heat oil and fry circles use tongs to fold circle in 1/2. Drudge through cinnamon and sugar mixture. Set aside. Continue until all “tacos” are complete.  Line up shells to be filled.  ...

Lemon Protein Muffins

  Ingredients Muffins 1 Teaspoon(s)  vanilla 1-1/2 Cup(s)    Quaker® Oats (quick or old fashioned, uncooked) 1 Cup(s)  all-purpose flour 1/2 Cup(s)  Sugar 1 Tablespoon(s)  Baking Powder 1 1/4 Cup milk of your choice 1 egg 2 Tablespoon(s)  vegetable oil grated lemon peel from 1 lemon Juice from 1 lemon 2 scoops Lean Whey Protein  Preheat oven 400 degrees. Line 12 muffin tins with silicone muffin cups or paper. Mix sugar, milk, egg. Oil, lemon zest and juice using paddle on stand mixer. High speed for 3 seconds.  Add rest of ingredients and mix just until combined. It will be lumpy. Scoop into cups add a little zest on top of each cup. Bake 20-24 minutes use toothpick when comes out clean, they are done. Now enjoy 

Lemon Greek Smashed Fingerling Potatoes

 1 used a 1 pound bag of small fingerling variety potatoes so there’s some purple some Yukon some red makes a pretty. I used a tinfoil roasting pan that I got at the dollar tree. The reason you want the potatoes to be the same size so when they cook they cook evenly. Ingredients  1 lb assorted fingerling potatoes   Herb flavored olive oil ( plain is fine) 1 tsp dried oregano  Salt & pepper  Lemon zest from 1 lemon Lemon juice from 1 lemon 1/2 cup chicken or vegetable broth 5 garlic cloves sliced  Bake 340 degrees. Add all Ingredients to roasting pan make sure all potatoes are about the same size cut if needed.  Make sure all potatoes have been rolled in the olive oil mixture.  Cover roasting pan with tin foil and bake for 50 minutes.  Uncover and bake another 7 minutes. Use a for to check for doneness. The fork should slide in easily.  Take out of pan and smash just a little, drizzle remaining mixture over the potatoes and serve

One-Pot Lemon Orzo Fish

 I used tilapia fish instead of chicken but you can use either one you would like. I like to use what I already have instead of always having chicken or whatever the recipe my calls for. Experiment do any kind of a protein that you want.  You could try turkey. If you’re using chicken or turkey you want to brown it on both sides before adding it to the pot. You can use chicken stock or chicken broth which ever you have on hand. Fresh lemon juice and zest of the best but if you need to buy the lemon juice started pretty darn make sure it’s a really good Italian lemon juice because they have the best flavor. 🍋Lemon Blueberry 🫐Olive Oil Cake

🍋🍋🍋 I use parchment paper for baking as it makes clean up so much easier. You can also up to spray the pan and put a little flour and dust it.  Use a good Virgin Olive Oil.  You can make a glaze if you like out of powdered sugar and lemon juice.  This is so easy, just combine all ingredients at once. How easy is this. Add the Blueberries at the end. Remember they will sink to the bottom while cooking and make a nice layer on the bottom.  Ingredients 1-1/2   cups   flour 1-1/2   cups   sugar 2-1/2   teaspoons   baking powder 1/2   teaspoon   baking soda
