🍋Lemon Blueberry 🫐Olive Oil Cake
🍋🍋🍋 I use parchment paper for baking as it makes clean up so much easier. You can also up to spray the pan and put a little flour and dust it.
Use a good Virgin Olive Oil.
You can make a glaze if you like out of powdered sugar and lemon juice.
This is so easy, just combine all ingredients at once. How easy is this. Add the Blueberries at the end. Remember they will sink to the bottom while cooking and make a nice layer on the bottom.
Ingredients
- 1-1/2 cups flour
- 1-1/2 cups sugar
- 2-1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- Zest of 1 lemon Large finely grated 🍋
- 1/2 cup milk
- 1/4 cup lemon juice🍋
- 3/4 cup Virgin Olive Oil
- 4 eggs
- Blueberries add after batter is mixed
Instructions
- Preheat oven to 325° F. Use 8” Springform pan. Line with parchment paper.
- In a large bowl, combine cake ingredients mix in a stand mixer. Just mix until all is combined the add the blueberries.
- Pour batter into prepared pan and bake for 35 to 50 minutes until dark and golden brown. While cake is in the oven.
- Remove cake from oven. Cool for 20 minutes before removing from pan, using the edges of the parchment paper and turn out onto a serving plate.Allow to cool more.Recipe adapted from Sur La Table And hostess at heart
