Lemon Protein Muffins

 

Ingredients

Muffins

  • 1 Teaspoon(s) vanilla
  • 1-1/2 Cup(s)  
    Quaker® Oats (quick or old fashioned, uncooked)
  • 1 Cup(s) all-purpose flour
  • 1/2 Cup(s) Sugar
  • 1 Tablespoon(s) Baking Powder
  • 1 1/4 Cup milk of your choice
  • 1 egg
  • 2 Tablespoon(s) vegetable oil
  • grated lemon peel from 1 lemon
  • Juice from 1 lemon
  • 2 scoops Lean Whey Protein 


Preheat oven 400 degrees. Line 12 muffin tins with silicone muffin cups or paper.
Mix sugar, milk, egg. Oil, lemon zest and juice using paddle on stand mixer. High speed for 3 seconds. 
Add rest of ingredients and mix just until combined. It will be lumpy.
Scoop into cups add a little zest on top of each cup.
Bake 20-24 minutes use toothpick when comes out clean, they are done. Now enjoy
