Artichoke Bake

 Artichoke Bake with mushrooms and cheese Canned/jarred artichoke hearts makes this dish.  I used the hearts in oil and there are spices as well. Ingredients  2-3 jars/canned artichoke hearts either in oil or water, drained 1 Lemon juiced 2-3 Shallots 3 Tbsp Butter 1 cup Mushrooms any kind 5 Cloves Garlic chopped 1 cup Mushrooms any kind 3 large cloves of garlic chopped 2/3 cup Italian Bread Crumbs 1/2 Parmesan Cheese grated or bottled Parsley Place the artichoke halves in a pattern in a 9 inch deep round dish.   You can use a 9x9 (if using 2 jars) square dish.  Pour lemon juice over the artichoke halves.  In a skillet add shallots, butter, mushrooms, garlic, sauté for 3 minutes.  Remove from heat add bread crumbs and cheese. Mix throughly and then scoop on top of artichokes.   Heat oven to 400 degrees  Place dish in oven on middle rack and back for 15-20 minutes.

This bread is so delish.  It tastes like the bread from Cheesecake Factory.  It is warm coming out of the oven and then smear butter all over each slice.  Yum! I used the wheat flour that we grind ourselves. I buy active yeast in a jar because I make bread a lot.  If you just want to try this recipe and not make more bread then I would suggest the packets of dry yeast. Ingredients  2 cups all purpose flour plus more 1 1/2 cups of wheat flour 2 Tbsp cocoa powder 2 Tbsp granulated sugar 2 1/4 tsp active yeast 1 1/4 cups of warm water ( you can heat it in the microwave) 2 Tbsp butter 1/4 cup molasses  1/2 cup honey Rolled oats for topping Combine all dry ingredients to the water.  Mix with stand mixer.  Make a well in the middle of the dry ingredients.  Add butter, molasses. honey to the warm water and mix. Smore' Bread Pudding This is so good, if you like bread pudding, you will LOVE this bread pudding.  Using Hawaiian sweet bread is so very different and wonderful. I used Hawaiian rolls as our stored didn't have any sweet bread, it cut down on the sugar. It has everything you want in a dessert.  There is bread and chocolate yum.  What more could you ask for.  My favorite thing is bread any way it comes. It is so velvety and smooth.  I used large marshmallows and cut them in quarters. I tried something different with the graham crackers and used a knife to chop the graham crackers and that way they are chunky pieces instead of power like what you get when you crush with a mallet or rolling pin.  Depends on what you like. Toffee Bar-Dessert made quickly and easily I used more than 1 type of nut to top this off. Make it your own.  I like pistachios, pecans, walnuts, almonds.  I wouldn't use peanuts as this particular nut takes over, peanuts are very strong in flavor. Just use what you have on hand. I used Ghirardelli baking disc's, you can use chips(they melt quicker) and any brand will do. Use what you like. You can use Hershey bars and lay them out on the cookie part. Might be quicker than to lay out disc's. Remember as I always say, use real butter not a substitute  or margarine. What a great dessert to share with neighbors.  You can take 1/2 for you and your family and give away the other half so that you aren't tempted with all those calories day after day. Baked Blueberry-Pecan French Toast You can use any thick bread that you want.  I used a baguette as I knew would be soft inside but crunchy on the outside. I like to soak mine overnight, so the hardness of the bread helps not make it too soggy.  I like using a mix of cream and milk, you can use all milk if you like. Don't use skim milk too liquidy. You can try coconut milk and/or coconut cream. Ingredients Butter 1 baguette cut in slices about 11/2  inch thick 1 cup Heavy Cream 11/2 cup of milk, whole or 2% 5 eggs 1/4 cup of packed brown sugar 1 tsp of madagascar vanilla paste 1 tsp grated fresh nutmeg, or ground is fine 2 tsp of vietnamese cinnamon  2 cups fresh blueberries  1 cup chopped pecans 1/2 stick butter 1/4 cup of brown sugar Maple syrup Butter one side of each slice of bread, lay buttered side down in a 13X9 baking dish. Asian Zucchini

Asian Zucchini right from the garden to your table.  It just makes the ordinary tastes extraordinary. This side dish is really simple. You don't know what else to do with all that zucchini that keeps growing in your garden, here is something new that keeps the fresh taste of that lovely vegetable in tact. Onion, you will thick slice the onion and then cut in 4.  Slice, cut in half and then cut in half again. Ingredients 2-3 zucchini 2 inch sliced logs 1white onion thick sliced 2 Tbsp sesame or peanut oil 1 cube of butter 1-2 chopped garlic or 1 tsp garlic powder 2-3 Tbsp Teriyaki sauce 1 Tbsp low sodium soy sauce sprinkle of red pepper flakes (optional) 1/2 tsp pepper 1/2-1 tsp sesame seeds You will want to use at least a 16 inch skillet to make sure all the ingredients have room to move around as they are sautéing.
