Asian Zucchini
Asian Zucchini right from the garden to your table. It just makes the ordinary tastes extraordinary.
This side dish is really simple. You don't know what else to do with all that zucchini that keeps growing in your garden, here is something new that keeps the fresh taste of that lovely vegetable in tact.
Onion, you will thick slice the onion and then cut in 4. Slice, cut in half and then cut in half again.
Ingredients
2-3 zucchini 2 inch sliced logs
1white onion thick sliced
2 Tbsp sesame or peanut oil
1 cube of butter
1-2 chopped garlic or 1 tsp garlic powder
2-3 Tbsp Teriyaki sauce
1 Tbsp low sodium soy sauce
sprinkle of red pepper flakes (optional)
1/2 tsp pepper
1/2-1 tsp sesame seeds
You will want to use at least a 16 inch skillet to make sure all the ingredients have room to move around as they are sautéing.
Add the oil, zucchini and onion (see above for onions) to the heated pan on medium high heat. Add the butter and stir around along with the garlic. Cook for 5 minutes. You don't want the zucchini to get soggy from over cooking.
Now add all ingredients except for the sesame seeds. Cook Stirring a couple of times so that sauce has incorporated all zucchini about 2-3 minutes. Serve warm or put in container and store in refrigerator and heat up for another night.
