Oatmeal Butterscotch Pecan Cookies

I added less sugar than usual as both the butterscotch and milk chocolate chips are pretty sweet. I use a 1/2 cup cookie scoop and then pressed down slightly on the mound.  I have added a 3/4 cup of peanut butter in place of 3/4 cup of butter.  I added 1/2 cup of brown sugar only.  1 cup of Lean Protein powder instead of  1 cup of flour.    Ingredients 1 1/4 sticks butter soften 1/4 cup brown sugar  1/4-1/2 cup granulated sugar 1cup peanut butter  1egg 1tsp vanilla  1 cup Lean Protein powder ( ask me) 3 cup quick oats 1tsp baking soda 1/2 tsp fresh nutmeg  1tsp Vienna cinnamon  Butterscotch chips Dark or Milk chocolate chips 1/2-3/4 cup chopped pecans Heat oven to 375° Mix the first five ingredients together when all Incorporated start adding the dry ingredients mix that together. Chicken and Mushroom Skillet

You can do a side vegetable or add it to skillet    Ingredients Two chicken breast-marinate and grill Marinade use one cup olive oil, half a cup, red wine vinegar, and 2 tablespoons of garlic pepper marinade overnight the chicken 1 large white onion sliced 3 cups assorted mushrooms your choice 5 cups boil in bag rice 3 Tbsp butter 1 Tbsp chopped garlic 32 oz chicken broth  Grill chicken let rest slice into slices not strips. Set aside Sauté onions and mushrooms in butter add more butter if needed.  Add rice stir a bit to let the rice pick up the flavors add 16 oz chicken broth, let boil for 8 minutes. Add More chicken broth as need for boiling rice.  Add chicken  reduce heat, heat for 5 minutes Serve

Citrus Drizzle

 You can use this on Fish  or frozen fish. You could probably also use it over chicken. A quarter of a stick of butter melted, add 2 tablespoons of citrus  infused balsamic vinegar.

Applesauce Oatmeal Pecan Bread

Use any nut you choose or leave out all together. You can use Greek plain yogurt in place of sour cream.    Ingredients 2 cups  all purpose flour 1 cup  quick oats 1/4 teaspoon  salt 2 teaspoons  cinnamon 2 teaspoons  baking powder 1/2 cup  granulated sugar 3/4 cup  Olive oil 2  eggs beaten 1/2 cup  sour cream 1 cup  applesauce (homemade or chunky style is best, can use store bought 8 oz) 1teaspoon  Madagascar vanilla  3/4 cup Rough chopped Pecans Preheat oven 350° Loaf pan or parchment lined 9x9 brownie/cake pan. Mix wet ingredients starting with sugar ( I know not wet) end at vanilla. Use stand mixer with whisk or paddle attachment.  When all ingredients are incorporated add the dry ingredients 1 cup at a time.  Mix in pecans just until combined.  Use spatula to pour batter into pan.  Bake 25 minutes test with toothpick in middle comes out clean.  Cool pan on wire rack.  Pour ...
