Applesauce Oatmeal Pecan Bread


Use any nut you choose or leave out all together. You can use Greek plain yogurt in place of sour cream. 

 Ingredients

  • 2 cups all purpose flour
  • 1 cup quick oats
  • 1/4 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 teaspoons baking powder
  • 1/2 cup granulated sugar
  • 3/4 cup Olive oil
  • 2 eggs beaten
  • 1/2 cup sour cream
  • 1 cup applesauce (homemade or chunky style is best, can use store bought 8 oz)
  • 1teaspoon Madagascar vanilla 
  • 3/4 cup Rough chopped Pecans
Preheat oven 350° Loaf pan or parchment lined 9x9 brownie/cake pan.

Mix wet ingredients starting with sugar ( I know not wet) end at vanilla. Use stand mixer with whisk or paddle attachment. 

When all ingredients are incorporated add the dry ingredients 1 cup at a time. 

Mix in pecans just until combined. 

Use spatula to pour batter into pan. 

Bake 25 minutes test with toothpick in middle comes out clean. 
Cool pan on wire rack. 
Pour glaze over bread by mixing 4 oz of applesauce with 1/2 cup of powdered sugar. If too thin add more powdered sugar. Remember you don’t want it too sweet.
