Lemon Curd Tartlets I used the lemon juice that I froze from my lemons off my tree a few months ago. So yummy. I used pre-made Pillsbury pastry dough. You can do Muffin tin size or Mini Muffin pan size. I did the smaller, so they were more bite size and you don't feel like it's too much.  You can choose you own fresh fruit that you want to decorate or place on top of the tart.  Strawberries, Raspberries, Blueberries or really anything you like best. Something you can just whip in a few minutes and have ready for unexpected guests. 1-3 Refrigerated Pie Crust 1 cup Butter 1 cup sugar 1/2 cup squeezed lemon juice 6 egg yolks 1 egg Cool whip Fresh Fruit Pre Heat 375 degrees Roll out the dough and use a biscuit cutter for your crust that would fit in the tin of your choice. Ie: if it is the mini muffin tin then use a small biscuit cutter, bigger tin bigger cutter. press into tin with Edges going up and over sides, prick bottom and sides of dough. Bake for 10 minutes ...

Barbecued Summer Shrimp and Mango Salsa 8-5-19 I buy my shrimp deveined but with the shell on, from the fish market. I only do a pound, you can do as many as you like. Super simple and tasty with just enough heat and acid from the lime and Old Bay. You want to to stir and toss so the seasonings are all coated on these delectable shell fish. I remove the shells before coating. The salsa is so refreshing and like a little pick me up. I love peeling the mango and small that beautiful flesh that seems to peel away from the skin so easily. 1pound medium deveined and shelled shrimp 2 Tbsp Old Bay Seasoning 2 Tbsp Olive Oil 1lime squeezed-juice 1 tsp lime zest 1-2 tsp salt 1Tbsp Garlic powder ( not fine) Salsa: 1 ripe mango Handful cilantro 1/2 finely chopped red onion 1Tbsp Chili powder Mix all ingredients with the 🍤 shrimp gently, except the salsa. Brownie deliciousness, tiny decedent chocolatey, caramel and pecans.  You can use milk chocolate, semi sweet chocolate or milk chocolate/peanut butter pieces mix.  I chose to use all 3 on different ones.  You can inject liquid caramel inside or leave out.  I used store bought Caramel Ice Cream topping, Smuckers.  I also used Ghirradeli Triple Chocolate Brownie Mix.  Make great quick desserts without spending the day in the kitchen with the oven on all day, especially in this heat that we have here in Vegas. I used a 9X9 pan, lined with parchment after spraying the bottom with Pam, as it really doesn't matter of the size.  You just need to watch it so it doesn't get over baked no matter what size pan you decide to use.  You can make a double batch if you are wanting to sneak a few for yourself. 1 box Brownie Mix . 1 jar of Caramel Ice Cream topping or make your own caramel 1 bag of chocolate pieces 12 oz Pecan Pieces or any nuts of your choo...
