Brownie deliciousness, tiny decedent chocolatey, caramel and pecans. You can use milk chocolate, semi sweet chocolate or milk chocolate/peanut butter pieces mix. I chose to use all 3 on different ones. You can inject liquid caramel inside or leave out. I used store bought Caramel Ice Cream topping, Smuckers. I also used Ghirradeli Triple Chocolate Brownie Mix. Make great quick desserts without spending the day in the kitchen with the oven on all day, especially in this heat that we have here in Vegas.
I used a 9X9 pan, lined with parchment after spraying the bottom with Pam, as it really doesn't matter of the size. You just need to watch it so it doesn't get over baked no matter what size pan you decide to use. You can make a double batch if you are wanting to sneak a few for yourself.
1 box Brownie Mix .
1 jar of Caramel Ice Cream topping or make your own caramel
1 bag of chocolate pieces
12 oz Pecan Pieces or any nuts of your choosing chopped medium/fine
Directions:
Follow the directions on the box for mixing and baking the brownies.
Once the brownies have cooled then take a cookie scoop. I used my middle sized one and scooped out brownie balls, as you dip in chocolate and roll in chopped nuts, they seem to get large, so you will want to use a smaller scoop than you want them to end up. Once you have scooped out the baked brownies, place them on a lined pan, plate or serving tray of your choice as you will be placing them in the freezer to get them cold before dipping them in warm melted chocolate.
You don't want to have them freeze so remove after about an hour or a little less.
Fill your injector (please see picture above)with the caramel.
Melt the chocolate of your choice in a double boiler or small pan with water about an inch and place a bowl that fits on top of the pan and just rests, without touching the water or going too far in. See picture below.
Remove brownie balls from freezer, First, Inject with Caramel, get ready to dip in chocolate and roll into Pecans/nuts. . The tip of the injector was a little too big, make sure you have a hard tip and narrow so when inserted into the brownie caramel won't go all over and stay in the indentation that you have made. You will place the finished dipped balls back on the cold tray that is lined with parchment. The chocolate will harden when the ball touches the cold tray/plate. Once The balls harden, you can store in a closed container.
