Almond Cookies with no flour. It’s 4 ingredients and you just mix and bake. How easy right!! I use a cookie scoop as the mix is very sticky.  Make sure you use a silicone mat not parchment paper or greased pan. You will want to use a large cookie sheet to bake with.  I used a triple mix of nestle chocolate mix.  I didn’t sprinkle with the salt 2 cups toasted sliced almonds, diamond brand if possible 2 egg whites 1 tsp vanilla paste Madagascar 2/3 cup confectioners sugar Chocolate Salt Preheat oven to 300* Use hand whisk to whip egg white, sugar and vanilla, carefully add the almonds and mix well but slow as to not break up the almonds. Drop by scoopfuls on the baking sheet, they don’t spread so you can drop close together. You will want to press lightly to flatten with fingers.   Make sure all almonds are together and have the sticky sauce on them or they won’t stay together throughout baking. Mini Cheesecakes with Apple Caramel Sauce I love making mini cheesecakes as they store really well and you don’t have to worry about eating too much. You can top them with almost anything. This recipe theses cheesecakes will be topped with a velvety fresh apple caramel sauce. I used a mixture of Granny Smith and Red Delicious . I peeled mined but you could leave the skins on the Red Delicious if you prefer. You can do the caramel sauce two different ways. Buy a jar of Smuckers or your favorite brand of caramel sauce or make your own using sugar and butter. I made a sauce for the apples and then used the jarred caramel sauce with it. Once the cheesecakes have cooled you can layer them in a container. I used a large container that held 4 on the bottom placed a piece of parchment paper and then stacked more and so on. I don't know if you knew this but you can make Dessert Popovers...yes I said Dessert Popovers.  I know you are saying to yourself " that sounds so delicious".  You can use fresh fruit , some homemade caramel or fresh pastry cream.  These are almost like  Pate a Choux (cream puffs).  You can also just add fruit to the batter, then sprinkle powdered sugar over them, add a dollop of Whipped cream and you have a beautiful dessert. You can make these in ramekins if you like and if you already have them.  I just bought the mini version of the popover pan, just to see if there was a big difference or really no difference at all.  if you are lactose intolerant you can use Coconut milk, you can also use whole, 2% but do not use skim (there needs to be fat) It is super important to make sure that your vessels, whatever you choose to make them in are hot and the butter that lined the vessels is all melted. Lime Black Beans    May 5, 2019 Are you looking for a side dish for every night or just with Mexican dishes.  There here is the bean for you.  I made it for Cinco De Mayo but really you can make at any time.  You can add different spices if you like to heat things up.  You can also interchange the different types of Chili's.   I am giving my version of these  delicioso  beans.   I am not a big bean eater, but Boy Oh Boy these beans are heaven.  I truly love them.  I didn't even have any left over to freeze.  Can you believe it?  I can't either.  That is how good these are.  You can even heat up some homemade (or homemade by Cardena's) tortilla's and wrap around some of the beans, guacamole, and sour cream.  Is your mouth watering yet.  Mine is and all I am doing is giving you some pointers and the recipe.   I hope you enjoy these as much as we did. Fresh Lemon Croissant's  These are so delish and takes absolutely no time at all.  I used lemons off our tree or you could also use the lemon juice you froze from your lemons that are in your freezer.  You will however need at least 1-2 actual lemons and you will want the zest. I am all about easy and if I have to buy the dough, so be it.  I like Pillsbury the best but I am sure any brand will work. I like to have the Croissant's cold it will be easier to stretch to the correct size and not over stretch. 1 can of Pillsbury Croissant rolls, you can get any size, no flavors 4 oz cream cheese 2 Tbsp granulated sugar, you can use sweetener substitute 2 Tbsp of lemon juice (or 1 ice cube if you have some frozen and thawed) or if you are unable to get lemons you can use 1/4 tsp Lemon Extract, it will have a different taste. zest of 1/2 lemon Icing Powdered Sugar Lemon Juice Lemon Zest Roll out and stretch the Croissant's, so they are ready for the fillin...
