I don't know if you knew this but you can make Dessert Popovers...yes I said Dessert Popovers.  I know you are saying to yourself " that sounds so delicious".  You can use fresh fruit , some homemade caramel or fresh pastry cream.  These are almost like Pate a Choux (cream puffs). 

You can also just add fruit to the batter, then sprinkle powdered sugar over them, add a dollop of Whipped cream and you have a beautiful dessert.

You can make these in ramekins if you like and if you already have them.  I just bought the mini version of the popover pan, just to see if there was a big difference or really no difference at all. 

if you are lactose intolerant you can use Coconut milk, you can also use whole, 2% but do not use skim (there needs to be fat)

It is super important to make sure that your vessels, whatever you choose to make them in are hot and the butter that lined the vessels is all melted.

Dessert Popovers

3 1/2 cups of milk
6 Large Eggs
4 Cups of Flour
1 tsp Baking Powder
Butter
Fruit of your choice, sliced or diced except if you are using Blueberries, leave these whole.

Powdered sugar
Butter
Jam or more fruit

Heat oven to 425*  Microwave the milk for 2-3 minutes just to get the chill off.  Using an Electric hand held or stand mixer beat eggs and gradually add milk.  Sift in dry ingredients and just combine, I would whip 2 times to make sure you have all the ingredients in the batter and not stuck on the sides of the bowl.  Make sure you are scraping down the side of the bowl before you do the last 2 whips of batter.

Grease the vessels you have chosen with the beautiful luscious butter that you have. If you are using ramekins place them on a cookie sheet, spaced apart, as to better handle when placing them in the oven.  Now place in the oven for 2-3 minutes.  

Remove and fill cups 3/4 full, now here is where you can add fruit in the bottom before pouring in the batter, if that is what you like.  You can also pour in batter to 1/4-1/2 full add fruit then fill the rest of the way and add more fruit. Now bake for 15 minutes. Then lower the heat to 375* and continue to bake for another 30 minutes.

Remove from oven and let cool slightly then gently remove the popovers and you can serve hot(like for breakfast/brunch) or serve cooled.

You can make a glaze drizzle or eat them with butter and jam. Is it a Dessert or a Breakfast, you decide
