Meat Stuffed Potato Roll




This is something you can play with. Change up the seasonings and/or mix, ground beef and/or pork. You can pretty much do anything as long as you keep the potato dough the way it’s supposed to be.

I used 1/2 lb of ground beef. You can use 1 lb if you like more meat


Potato Roll

4 Yukon medium potatoes peeled, cooked and mashed not whipped

2 cups flour 

1/2-1 pkt Ranch Dressing mix

1 Tbsp Garlic Pepper

1tsp Active Yeast

1 tsp sugar

1/2 cup warm water


Meat Filling

1/2 lb ground beef

1/2-1 white onion chopped

3 cloves garlic chopped 

1/2 green pepper diced or diced chili

7 oz diced roasted tomatoes 

1/2 cup chicken or beef broth 

1 Tbsp smoked paprika 

2 Tbsp Garlic Pepper


Butter


Mix sugar yeast and water. Let sit for 5 minutes 

Remove 1/2-3/4 of mashed potatoes and add to mixing bowl. Add flour and yeast mix. Mix well to form dough add ranch dressing seasoning and garlic pepper. Make sure all ingredients are incorporated well. Form the dough into a ball in the bowl. Cover and let rise for one hour. It will only rise about half the size that you put in.




Cook onions and pepper in one tablespoon of olive oil. Cook until translucent/limp. Add beef and pork cook until done. Add the garlic, garlic pepper, tomatoes, and the broth. Let simmer on medium high heat until all the liquid is gone. Set aside to cool for 5 minutes. 




Heat oven 350°

Place dough on flour dusted area and roll to a rectangle or close, add more flour if too wet as rolling. Add meat mixture on entire rectangle then start rolling on long end .  




Place roll on parchment lines cookie sheet place an oven cook for 30 minutes then add butter onto the outside of the dough- as much as you like, place back in the oven for 10 to 15 minutes more. Remove from oven after crispy brown outside add more butter all over. Be careful it will be hot.  Let sit for 10 minutes before slicing.
