Pumpkin Spicy Cookies




 You can flatten or leave in a ball. Depending on the chewiness you want. You can double the scoop size as well just add a few minutes of bake time.


Ingredients 

1 cup of butter softened

3/4 cup of pumpkin purée 

3/4 cups of granulated sugar

1/2 Tbsp Madagascar vanilla paste

1/2 teaspoons of baking powder

2 teaspoon of pumpkin pie spice

1 egg

2 1/4 cups of all-purpose flour

Bowl~with 3/4 cup sugar, 1tbsp cinnamon and pumpkin pie spice.

Mix everything in stand mixer except flour.

Blend until all ingredients are creamed together. Add flour 1 cup at a time. Dough will be moist. Place in fridge for 1-2 hours. 

Heat oven to 350°

Scoop dough into ball form and drop in prepared bowl of sugar and spice. 



Place on lined cookie sheet 

Press down if you want a flatter cookie or

leave as scooped

If ball cookies bake for 15 minutes if flat bake 13 minutes
