Pumpkin Curry Chili

 

You can use any beans you like for for the chili, just make sure you use two kinds. You can also use three kinds of just makes more chili so I used kidney beans and black beans but I like cannelloni beans as well or sometimes pinto beans. Those are always good as well.

Ingredients 

1 can kidney beans

1 can black beans

1/2 pound jimmy dean sausage 

1Tbsp garlic pepper 

2 Tbsp butter

1 small can diced green chilies

1 white onion

5 stalks Celery 

1 8 oz bag baby carrots cut in 1/3

8 oz sliced mushrooms 

1 can coconut milk lite

3/4 can pumpkin purée 


2 t fennel seed or powdered

1t ground coriander 

1t white pepper 

11/2 t cloves

1T ground ginger or 3 slices grated

1T pumpkin pie spice

2t turmeric 

1t ground all spice 

2t ground cumin

1T cinnamon 

2 T smoked paprika 


Brown sausage sprinkled with garlic pepper butter and onion. Once onion has lightened add carrots and celery. Sauté for 4 minutes. Stirring the sausage as not to burn. Add mushrooms sauté for 3 minutes.

Add coconut milk and pumpkin stir until incorporated. 



Add all spices. Simmer for 10 minutes stirring occasionally. 

Now get your favorite bowl sit down on your cozy couch and enjoy
