German 1 Pot Meal with Pumpkin

 



  • 16 oz Sauerkraut
  • Butter
  • Polish Kielbasa sausage cut into 1-inch slices 
  • onion rough chopped big chunks
  • 1/4 cup Dijon mustard 
  • 1 mini Coke
  • 3-4 cups Chicken Bone Broth
  • 10  yellow  potato small cubes
  • CUP grated sharp ( black wrapper ) Tilamook Cheddar cheese 
  • 3/4 cup Pumpkin purée 
  • 3 Tbsp pumpkin pie spice 

  • Use 5 quart pot, medium heat, brown kielbasa, 3-4 Tbsp butter add potatoes  add ground black pepper cook for about 7-8 minutes. Remove the potatoes and continue to brown kielbasa. 2-3 minutes. Add potatoes back in and brown for 3


  • Add the coke and bone broth. Bring the mixture to a boil. Add pumpkin, spice and Dijon . Mix thoroughly. Test the potato bites for doneness with a fork. I like mine a little firm so they stand up to the kielbasa. Add more broth as needed as it evaporates from boiling until potatoes are done.

  • There shouldn’t be any extra broth as you aren’t making a soup. Add kraut and cheese make sure it’s all mixed in and cheese is melted,then serve-1 pot wonder!!
