Berry Pumpkin Pie
I made this with and berries I had in the fridge.
I used Cherry pie filling as well, that way I didn’t have to add sugar.
Ingredients
Pillsbury pie crust
Blueberries
1 can cherry pie filling
1 cup pumpkin purée
1 cup coconut milk
2 egg yolks
1 Tbsp pumpkin pie spice
1/2 Tbsp Vienna Cinnamon
Heat oven to 425°
Line springform pan with parchment. Cut pie crust to fit bottom of pan. Place in pan and mold into pan. Set aside
Mix pumpkin, milk, spices and egg yolks.
Add berries and pie filling on top of pie crust.
Now add pumpkin mix on top.Bake for 45 minutes. Use toothpick to test for doneness, toothpick comes out clean done.
You can add 10 minutes to the time to make sure it was done.
