Pumpkin Quiche-ist

 You can call it a quiche or just a meal in a pan. This was fun to make and smelled so great. Bacon sizzling… Veggies sautéing.. mmm I can’t say this enough make sure your spice is fresh as in a new bottle. Spices tend to dissipate over time. Take the $7 you were going to buy a fancy drink and spend it on the spice.  Ingredients  7 slices bacon cooked 4-6 corn tortillas  3/4 bell pepper diced 1 red onion sliced  2 Tbsp butter 6 eggs 2-3 Tbsp Garlic pepper 1 15 oz can pumpkin puree  1 Tbsp pumpkin pie spice 1/2 cup coconut milk  3 oz grated sharp cheddar  2 oz grated mozzarella  Heat oven to 425° Bake bacon on large cookie sheet lined with parchment, for 15-20 minutes ( your liking) Line 9x9 with parchment, line parchment with corn tortillas. Pumpkin Rice Krispy

  You can always double the recipe and use a 13x9 pan Prepare pan with spray or parchment  Ingredients  1/4 cup butter  1/2 cup pumpkin puree  13 oz large marshmallows  2Tbsp pumpkin spice  10-11 cups rice Krispy  Use large saucepan melt butter with pumpkin and spice. Keep mixing Add marshmallows stirring until all melted.  Quickly pour in rice Krispy, keep pouring until all of marshmallow sauce is absorbed and a little on the drier side.  Act quickly and pour all mixture until a prepared 9x9 pan. Let sit for an hour.

Pumpkiny Gingerbread Bread

I added the gingerbread portion on the bottom and added the pumpkin batter on top.  Gingerbread batter 1/4 cup sugar 1/2 cup molasses  1/2 egg- beaten so it can be divided 1 1/4 cup flour  3/4 tsp baking soda  1 Tbsp a ginger 1 tsp cinnamon  1/4 tsp cloves  1/2 cup warm water Pumpkin portion 1/2 can pumpkin puree 1/4 cup white sugar 1/2 cup maple syrup  1/2 cup olive oil 1/3 cup water 2 large eggs 2 tsp vanilla extract 1 3/4 cups all-purpose flour 1 tsp baking soda 1 1/2 Tbsp pumpkin spice  1/2 tsp freshly grated nutmeg  Bake 350° Mix each batter separately.    Combine all wet ingredients thoroughly mix then add dry ingredients for each batter.  Spray or grease with butter. Line with parchment with or without grease.  Pour gingerbread batter in first then swirl or pour pumpkin batter on top. Pumpkin Flatbread or Pizza

  Ingredients  Pillsbury Pizza dough Corn meal 1 cup pumpkin puree  1/2 cup ricotta cheese 1 cup Alfredo sauce homemade/jar 1-2 cloves garlic chopped 2 Tbsp Pumpkin spice  1Tbsp chopped or ground Sage 2 Tbsp Garlic Pepper  Sliced vegetables- your choice Meat-bacon, sausage, ham or hamburger  10-12 slices mozzarella cheese Grated parm Heat oven 425° Follow directions on package. Use Pizza Let dough sit on counter for 15 minutes so it’s pliable. Take out of packaging roll in corn meal, keep adding and unrolling until bottom of dough. This helps the dough not stick to pan.  Sauté veggies slightly  Mix all wet ingredients and spices.  Cover dough with “sauce “ add veggies and cooked meat if using.  pan Bake per package 

Pâté a Choux … Who.. Pumpkin

You can fill with Whipped Cream flavored with spice or pastry cream with pumpkin. Releasing the steam helps to dry out the inside.  Ingredients  1/2 stick of butter  1/4 cup pumpkin puree  1 cup water 1 cup flour 1 1/2 Tbsp pumpkin spice  4 large eggs Preheat oven to 425° In a medium sauce pan combine water, butter, pumpkin and spice Bring to a boil Add flour and whisk vigorously until mixture forms a ball.  Transfer mixture into bowl of a stand mixer and beat on medium for 2 minutes to cool the dough.  With the mixer on, medium speed add the eggs, 1 at a time, making sure each egg is completely incorporated before continuing.  Once all eggs have been added, the mixture should stick to the sides of the bowl. Scoop dough with a small-medium cookie scoop rounds, 2 inches apart on parchment lined sheet pans. Cook for 10 minutes, then turn the oven down to 350° and bake for 10 more minutes or until golden brown.  Once removed from the oven pierce...

Thai Pumpkin Chicken Noodles

  Diced green onion, and chopped peanuts, for topping Ingredients  1 cup peanut butter ¼ cup soy sauce 1/2 cup white wine vinegar 3 Tbsp sugar  6 flowerettes of broccoli- cut in 1/2-1/3 1/2 zucchini sliced 1 stalk celery sliced Sliced leek **optional 1 red onion diced 2 Tbsp ground ginger 1Tbsp pumpkin spice  2 cloves garlic diced 1 1/2 cups chicken broth 1/2 cup pumpkin puree 1 cup coconut milk 2 small pack ramen noodles(Top ramen) 2 large chicken breast -marinated Ingredients for marinade  3/4 cup low sodium Soy sauce  1 cup olive oil  1/2 cup seasoned rice vinegar  1Tbsp sugar 1 Tbsp course black pepper  5 cloves chopped garlic  Use Dutch oven. Add butter and veggies including onion,sauté for 3-5 minutes. Make sauce with first 1-4 ingredients set aside.  Bbq chicken at this time.
