 I used Readiwhip whipped cream as that is what I had also added some coconut milk.  Ingredients  15-16 oz can Pumpkin puree 1/4-1/2 cup coconut milk  1/2-3/4 can of Readiwhip 1/2 cup sugar 2Tbsp Pumpkin Pie Spice  1tsp cinnamon  1 1/2 Tbsp Madagascar Vanilla bean paste  3 eggs Streusel  2 cups quick oats 1/2-1 cup flour  1 1/2 stick butter melted  1cup brown sugar  2 tsp cinnamon  Heat oven to 350° Using a whisk for pumpkin ingredients combine  Pour not greased cast iron skillet  Mix crumbled spread evenly on top.  Bake for 27 minutes or until toothpick comes out clean.  Serve with ice cream or whipped cream or I like it just as is

Pumpkin Sweet Cornbread

  I use Simply Homemade box mix. You can make from scratch if you want to do all that work…. But why would you.  Ingredients  1 box cornbread box mix 15oz can of Puree Pumpkin  2 eggs 1/2 cup sugar 1/2 cup coconut milk 1/4 cup Olive Oil 2 Tbsp pumpkin pie spice  2 Tbsp Raw honey Heat oven to 350° Pour batter into 9x9 baking pan. Line with parchment or if you have the type that have ridges all over just pour in.  Mix all ingredients together with whisk. Bake for 27 minutes. Insert toothpick and if comes out clean it’s done. If not keep putting back into the oven at 5 minute intervals.  Let cool can serve with whipped cream or whipped honey butter

Think everything Fall Rice

Ingredients  1 1/2   cups   low sodium chicken broth~add more if needed 1 1/2   cups   apple juice 1   tablespoon   Dijon mustard 4 tablespoons   butter, divided 1/4   tsp EACH , dried oregano, dried thyme  1   cup   wild rice blend uncle Bens small box~don’t use the flavor pkt  1 large red onion, diced big pieces. 1   Fuji  chopped leave skin on chopped. Blueberry Blueberry…Nut

  I used 3/4 cup wheat flour that my husband ground from whole wheat. 3/4 cup Flour. I like pecans, you can roast or leave plain. I left plain. Mini German Apfel Kuchen

 I love all German food.. I’m generational Deutschland. I used 6- 2 inch ramekins and 4 -3 inch Ramekins.  Ingredients  2 pounds (about 4) Granny Smith apples , peeled, cored, cut into 8 wedges, and sliced 1/8 inch thick crosswise 3 tablespoon Madagascar Vanilla 1 teaspoon lemon juice, freshly squeezed 1 cup (5 ounces) unbleached all-purpose flour 1 cup (7 ounces) granulated sugar 2 teaspoons baking powder 3 large eggs. room temperature 10 tablespoons (5 ounces)  butter 3/4  cup coconut milk not the cream 1 teaspoon pure vanilla  DIRECTIONS: 1. Adjust oven rack to lower-middle position and heat oven to 350℉. Spray six 3-inch Ramekins or line with parchment  2. In a saucepan over medium heat, cook the butter until it turns golden brown, about 5-8 minutes; remove from heat and let cool slightly. 3. OH My Pineapple Mini

  These little mini cheesecakes are so fresh and delicious. I also made a pineapple caramel sauce.  I just look in my fridge and pantry and put this deliciousness together.  Ingredients  1 1/4 cup ( split) pineapple cut in very small chunks 1/4-1/2 cup granulated sugar  1-8oz cream cheese soften 1egg 1 Tbs lemon juice 1Tbs Vanilla ( not extract) 2cups crushed Cinnamon Toast Crunch cereal 6 Tbs butter not margarine  1/4 cup brown sugar Heat oven to 350° Line muffin tin with silicone cups   Mix cream cheese and sugar until well incorporated to a soft whipped stage. Add egg mix well on high speed of mixer, add lemon juice and vanilla. Set aside mixture will be runny like cake batter. Add 1/2 cup of small chunk pineapple and mix with spatula.  Add cereal to a baggie and zip closed. Smash with a rolling pin and then roll on both sides until a nice dust forms.
