One Pot Cheesy Beef Enchiladas


Ingredients

  • 1 pounds lean ground beef
  • 1 diced onion
  • 4 cloves garlic sliced
  • 2-3 Tbsp butter
  • 1 Tbsp Herb flavored Olive Oil 
  • 1/4 cup taco seasoning
  • 1-1 1/2 cup water
  • 1 cup of instant rice
  • 1/2-1 cup of beef or chicken stock
  •  
    c
  • 19 oz Red Enchilada Sauce
  • 15 ounce can black bean, kidney, cannelloni beans drained and rinsed
  • 15 ounce can pinto beans drained and rinsed
  • 5-6 medium flour tortillas sliced into triangles 
  • 1 cup shredded cheddar jack

Cook , ground beef, onions, garlic, butter and oil. Cook until meat is no longer pink. 
Add taco seasoning, water, rice, stock and sauce. Cook on med-high until rice it tender. 
Add beans, stir until mixed, then add triangled tortillas a few at a time. Stir until all is married. 

Add cheese after dishing up in bowls.
