One Pot Cheesy Beef Enchiladas
Ingredients
- 1 pounds lean ground beef
- 1 diced onion
- 4 cloves garlic sliced
- 2-3 Tbsp butter
- 1 Tbsp Herb flavored Olive Oil
- 1/4 cup taco seasoning
- 1-1 1/2 cup water
- 1 cup of instant rice
- 1/2-1 cup of beef or chicken stock

c - 19 oz Red Enchilada Sauce
- 15 ounce can black bean, kidney, cannelloni beans drained and rinsed
- 15 ounce can pinto beans drained and rinsed
- 5-6 medium flour tortillas sliced into triangles
- 1 cup shredded cheddar jack
Cook , ground beef, onions, garlic, butter and oil. Cook until meat is no longer pink.
Add taco seasoning, water, rice, stock and sauce. Cook on med-high until rice it tender.
Add beans, stir until mixed, then add triangled tortillas a few at a time. Stir until all is married.
Add cheese after dishing up in bowls.
