One Pot Cheesy Beef Enchiladas
Ingredients 1 pounds lean ground beef 1 diced onion 4 cloves garlic sliced 2-3 Tbsp butter 1 Tbsp Herb flavored Olive Oil 1/4 cup taco seasoning 1-1 1/2 cup water 1 cup of instant rice 1/2-1 cup of beef or chicken stock c 19 oz Red Enchilada Sauce 15 ounce can black bean, kidney, cannelloni beans drained and rinsed 15 ounce can pinto beans drained and rinsed 5-6 medium flour tortillas sliced into triangles 1 cup shredded cheddar jack Cook , ground beef, onions, garlic, butter and oil. Cook until meat is no longer pink. Add taco seasoning, water, rice, stock and sauce. Cook on med-high until rice it tender. Add beans, stir until mixed, then add triangled tortillas a few at a time. Stir until all is married. Add cheese after dishing up in bowls.
