Gingerbread Eggnog Tiramisu-No Coffee No Alcohol

 



  • 2 packages of premade gingerbread dough. Bake as directed 
  • 2 cups heavy whipping cream
  • 3 large egg yolks
  • 1 ¼ cups powdered sugar, sifted
  • 2 ¼ cups mascarpone
  • ½ cup eggnog
  • 1 jar Fig Jam
  • 14-18 gingerbread men cookies (about 4-inch in size)
  • 2 Tbsp Madagascar Vanilla 
  • Optional whipped cream, unsweetened cocoa, and gingerbread men cookie for decoration
  • Bake cookies according to directions. Cool. Paint Jam generously with silicone basting brush. One side only leave overnight. Leave side 2 
  • Whip the whipping cream until stiff peaks form. Set aside
  • Separate the eggs. Whip the egg yolks and sifted sugar until smooth and creamy. Whip in mascarpone a little at a time until creamy. Add 1/4 cup of eggnog. Whip. Fold in a 1/4 of the whipped cream.Set aside
  • Use the jar jam came in mix with rest of eggnog and Tbsp Madagascar vanilla.
  • Spread a thin layer of mascarpone whip on top of the parchment lined 9x13 dish. 
  • Spread jam, eggnog and vanilla mix on the cookies to layer on the bottom. Next add 1/2 of mascarpone whip on top of cookies and then layer of cookies that have the jam syrup on them. Another layer of whipped mascarpone. Add rest of whipped cream on top. Can use piping bag with tip. Place in fridge overnight. 
  • Take out dust with cocoa and decorate with mini gingerbread men
