Yummy Queso with a Spin
Ingredients
1-2 tablespoon butter
1/2 red or white onion, chopped
5 cloves garlic, chopped
10 cherry tomato, diced
3 roasted jalapeño pepper, chopped( you might want to remove seeds)
1 small can chopped green chilies
1-2 tsp chili powder (optional)
1/2 tsp cumin
1 tablespoon cornstarch
1 ½ -2 cup heavy cream
2 cups Mexican cheese, shredded
salt to taste
ground black pepper to taste
1-2 tablespoons fresh cilantro, finely chopped (optional for garnish)
We forgot to add the spices because we didn’t think about it until after we started tasting so it’s up to you whether you want it spicy or if you just want it to be palatable .
Sauté the onions first in the butter and then add the garlic after the onions have kind of softened then you want to add the tomatoes and just kind of get all those flavors together add the spices( you can add a little at a time)Then you start adding the green chilies the jalapeños after they’ve been roasted, chopped then you’ll start adding the cream it warmed up then you add the cheese and as it thickens you will keep adding more cream. You can also add a little milk instead of all cream. It’s totally up to you and how thin you want your queso. Taste to find out if you want more spicy. If you’ve removed all the seeds, then the queso won’t be as spicy, even if you were to add the chili powder, but if you left some of the seeds, the queso will be spicier.
We chose not to add cilantro
