Chicken Olivia ala Pam
You can use rotisserie chicken if you would rather
You can switch out the mushroom soup for cream of chicken.
You can omit onions if you don’t like onions. They are so scrummy, so not sure why you would leave them off .
Ingredients
3 large boneless/skinless chicken breast
Marinade- Olive Oil, red wine vinegar, salt pepper 6 Cloves garlic chopped
Sauce
One can cream of mushroom soup
1 cup sour cream
One small can of diced green chilies
Half a cup of sliced black olives
One red or white onion, sliced
2 tablespoons of butter
Chopped chives, or chopped green onion
Pepper
Topping—
1 1/2 cups grated Cheddar
1 cup grated mozzarella
Marinate chicken over night, turning front to back aft and on.
Next day BBQ chicken 5 minutes on both sides.
Sauté onions in butter.
Mix soup, sour cream, chili and pepper. Set aside
Heat oven to 375°
Line 9x13 baking dish with parchment paper ( easy clean up)After cooked, Cut each chicken breast in half. Arrange in dish with space for sauce to get in between.
Arrange onions on top of chicken, add sauce, olives cheddar then mozzarella.
Bake covered with tin foil 30 minutes
Take out and cool for 10 minutes sprinkle chives or green onions over top, serve over angel hair pasta or rice.
