Coconut Pecan No Bake



Ingredients

1 1/2-2 cups of chopped toasted Pecans

1/2 cup evaporated milk 

1 1/2 cups Brown sugar

1/2 granulated sugar

1 tsp Pure Vanilla 

1- 1 1/2 cups of shredded coconut 

1/2 tsp flake sea salt

1/2 cup Karo syrup

1/2 cup butter 

Add milk, brown and granulated sugar, butter and Karo syrup in a large sauce pan. Stirring constantly, do not burn mixture. 


 




Boil 3 minutes without stirring , needs to reach softball stage. Once stage is reached remove from heat. 



Add vanilla, pecans and coconut stir until mixture thickens. 

Cool slightly , add salt stir until fully incorporated. 

Line cookie sheet with parchment paper. Scoop cookie mixture onto the lined pan. Cool slightly add mini chips on top of each cookie.
