Chocolate Chocolate Cheesecake Mini Cakes






I used silicon muffin liners. I also used mini muffin silicone liners. 

You can add the chocolate mixture anyway you like into the cup if you want to put it on the bottom and then up one side and then just put the cheesecake on the other side and let it kind of fall down into the bottom as well. They will turn out is perfectly fine and  it’ll cook either way.


 Ingredients

  • 1/2 cup butter, at room temperature
  • 2/3 cup brown sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 2/3 cup sour cream
  • 1 tsp ground cinnmon
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2/3 cup milk
  • 1/2-3/4 cup Milk Chocolate Chips
  • 1 cup mini chocolate chips
Cheesecake Filling

  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup sugar
  • 1 large egg
  1. Preheat oven to 400º F. Prepare 20 muffin cups with liners.
  2. In a bowl mix together flour, cocoa powder, salt, baking powder, baking soda and cinnamon. 
  3. Beat brown sugar and butter together until creamy. Add egg, vanilla and sour cream. Beat 
  4. Slowly add the flour mixture and milk
  5. Fold in milk chocolate chips. 

  1. Beat cream cheese and sugar, beat until smooth. 
  2. Add egg beat until fully incorporated. 

  1. Place a spoonful of the muffin batter to one side of each liner. Add cheesecake layer to other side. It’s ok if both batters mix a little. 
  2. Sprinkle the tops of each muffin with mini chocolate chips. 
  3. Bake for 16-18 minutes until a tester comes out mostly clean.
  4. Remove from oven and let cool for 5 minutes before removing to a wire rack to cool completely.
