Fantastic Easy Chicken Enchiladas



 Are used rotisserie chicken and then use the little trick of taking a hand mixer and breaking up the chicken so it’s all shredded.


Ingredients

2 cups of shredded chicken

1-15 ounce can of refried beans

 One package of flour tortillas

Chop red onion

Diced green chilies

Red Enchilada sauce

Grated 3 Mexican cheese

One small canned of sliced black olives

Sour cream, and guacamole 

Heat oven to 400°

Get your station set up so that your chicken and your flour tortillas are close together along with the onion and the diced chilies.



Take a tortilla spread 1 teaspoon of the refried beans next to add the shredded chicken 3 teaspoons of the enchilada sauce then onions, diced chilies, cheese roll up the tortilla place open side down and your 13 x 9 pan. Can you need to do this until you have the desired amount for the rest of the enchilada sauce over the top, cheese, and then olives. 

Bake for 25 minutes

Serve immediately add sour cream, and guacamole on the side
