Scalloped Corn

 

🌽🌽Stripping corn is removing the kernels from the husks.

You can use guava or honey for your sweetener in place of sugar


4 corn husks stripped 

4-5 Yukon Potatoes cubed

1 White onion- diced

Butter

3 eggs

1 cup heavy whipping cream

3/4 cup coconut milk

1/4 cup sugar 

Salt/pepper to taste 

4 1/2 cups of shredded Mexican blend cheese 

Tube of Butter Crackers- crushed

2 tablespoons of butter


Preheat Oven 325 degrees

Boil potatoes until you can barely stick a fork in. Drain and Set aside. You do not want these fully cooked as they will finish cooking in the oven. 

Sauté the onion in a slice of butter. Set aside. 

Beat together eggs, cream, coconut milk, sugar, salt, pepper, 3 cups cheese and onions.

Add in corn and potatoes and mix well along with 1/2 of the crushed crackers.

Pour in a parchment paper lined 13x9 baking dish. 

Bake 30 minutes. 

Mix remaining crackers with 2 Tbsp melted butter and 1 1/2 cup cheese. Set Aside.

Remove dish from oven sprinkle the mixture of crackers, butter and cheese. 

Bake 30 minutes more. Let cook 1/2 hour before serving
