Potato Pie

 You can use any cheese that you choose to in the middle of the potato layers. I used a spring form pan lined with parchment paper. Using a food processor, This will make everything uniform so will bake evenly.

10 medium sized Yukon potato 

1 medium size red onion

Sliced Swiss Cheese

Sliced Pepper Jack

Sauce: 

2 eggs

1/4 cup fresh Rosemary fine chopped

1/2 cup milk

1/2 cup flour 

1 tsp baking powder 

Mix well set aside

1/2 cup Parmesan 

1/2 cup seasoned bread crumbs 

2-3 Tbsp butter chopped



Preheat oven 350°

Use a food processor with the slicing attachment. Add potatoes and lastly add onion.



Line spring form pan with parchment.

Add potatoes and onions to a large mixing bowl. Pour sauce over and mix well. Make sure each slice has a little sauce. 

Pour 1/2 mixture in bottom of prepared pan. Add Swiss cheese slices 1 on each side (4 total) then fold Pepper Jack to cover any open space that shows potato. Add the rest of potato mixture. Pat down. Sprinkle Parmesan covering top. Sprinkle bread crumbs over top. Top with butter. 




Place in oven for 60-75 minutes or until potatoes are cooked, when knife insert’s
