Corn Salad Meal
Cube an avocado in its 1/2 shell, cut length way then cross. Fold the shell and the avocado pieces will fall out.
Stripping corn just means removing the kernels.
You skip the salt in the dressing as Parmesan cheese is a salty cheese.
3 husks stripped if kernels
1 can black beans-drained
1 can garbanzo beans-drained
1 red onion
1 1/2 Tbsp butter
3/4 English cucumbers-cubed
1-2 avocado cubed
Dressing
3/4 Olive Oil
1/2 cup red wine vinegar
1/4 cup sugar or honey
1/4 cup sliced Basil
Salt/Pepper to taste
Couple of sprinkles grated Parmesan cheese
Mix the dressing in large bowl then add all ingredients except onion.
Sauté red onion with the butter just until caramelized. Remove from heat and let sit for a couple of minutes then add to bowl and toss until all is coated with dressing. Serve alone or with your choice of main.
