Split Pea Soup
Were you just thinking, wow Thanksgiving is over and what am I going to do with all this leftover ham. I have the answer for you. Split Pea Soup, you use the bone from that delicious baked ham you just had for Thanksgiving and this soup freezes really well.
Ingredients
1 bag split peas
2 quarts water
1 tsp pepper
1 large white onion chopped
Bone from Ham with some ham left on
1 Tbsp fresh oregano or dried oregano
Garlic (optional) or garlic powder
2 cups diced carrots
1 1/2 cups diced celery
Soak peas in water for 2 hours
Drain
Add ham bone, onion, pepper and oregano. Simmer for 1 hour and check water, if needed add more so that its able to simmer for 1/2 more with carrots and celery. Remove bone and chop ham to be able to add bacon. Simmer for 1/2 with the vegetables, test and if soft add the diced ham and stir. This is all, it's now ready to eat.
