Sour Cream and Chive Smashed Potato salad

 I pickled the red onions and used some of the left over pickling juice.





Ingredients

1 pound potatoes, yukon or other thin skinned potato, whole    

Sea Salt

1/2 red onions rough chopped or sliced

Chives

4 cloves garlic rough chopped

1/2 cup sour cream

1/2 cup miracle whip or mayo

1 Tbsp Dijon Mustard

1 Tbsp garlic pepper

Red wine vinegar

1 tsp granulated sugar


Pour the vinegar, sugar and 2 cloves chopped garlic in a pint jar add the onions and set aside. Boil the potatoes whole add the salt to the water approximately 15-20 minutes.  Boil until just before completely done, you don't want mushy potato as you will need to smash them before dressing them. 

Drain potatoes and let sit for 5-10 minutes, if serving warm. Mix sour cream, miracle whip, Dijon and garlic pepper to make a dressing, set aside.  Once the potatoes are cooled but still warm , transfer to a bowl, take potato masher or use the back of a large spoon to smash all of the potatoes, leaving skins on. Pour dressing over potatoes and mix just enough to dress.

If serving as a cold side, just place the bowl that has been dressed in the fridge.
