Vegetable and Orzo
Orzo and Tomatoes plus other vegetable. I found a recipe in one of the Food Network magazines sometime this month. I changed out the canned tomatoes for fresh and added something else.
Orzo is a very small, rice shaped pasta. It can be used as a side dish or salad, depends on what you like best.
You can add so many different things to this pasta and it is so tasty. You can also add homemade pesto to this for a salad or side dish. I like to add a lot of different veggies as pretty much all types of vegetables go with this pasta.
I used a variety of cherry tomatoes as the colors really brighten this dish up. I cut them all in 1/2 no matter the size of the tomatoes.
I buy the elephant bulbs of garlic. You can buy the regular bulbs and just use more of them. This also depends on if you like or LOVE garlic. My family loves garlic. We love to go to the Garlic Festival in Gilroy CA.
If you have celery left over in your refrigerator and don't know what you will use if for, slice it up and and sauté with the the onions and garlic.
If you don't have chicken broth and you only have chicken stock that is ok as well, you will use 1 cup of stock and 1 cup of water to dilute.
You can test the pasta by scooping out a small 1/2 teaspoon and tasting it, keep cooking until pasta is the doneness that you like. I like mine a little al dente. Don't let all the liquid dissipate if the liquid is getting low, you can add more broth or water.
Ingredients
3 Tbsp butter
1 Tbsp olive oil
1 white onion big chopped
1 cup of sliced celery and cut in 1/2
3-5 large cloves of garlic, chopped
1 cup Orzo pasta
1 cup of sliced/cut cherry tomatoes
2 cups Chicken broth
1 cup plus Barilla garlic or traditional spaghetti sauce
Add 2 tbsp butter to a large skillet along with onions, celery and garlic sauté for 3 minutes. Toast the orzo in this mixture along with the olive oil and the 1 tbsp of butter. Moving the pasta around so it doesn't burn. When the pasta is browned you will then add the rest of the ingredients, tomatoes, broth and spaghetti sauce. Stir until incorporated. Cover and bring to a boil, then reduce heat and cook until the pasta is tender. If you have added more liquid you will also need to add more sauce to keep that tomato taste.
Serve as a side or an entree.
