Rosette Mashed/Broiled Potato's

Image
Rosette Mashed/Broiled Potato’s These are so simple they are mashed potatoes that you put in a pastry bag with a rosette tip and then you just push the potatoes right through the top and they come out like little roses. Then you’re going to place them under the broiler until they get nice and crispy on the outside and serve them . So here is the recipe. You can also heat them back up the next day. Make these potatoes ahead of time like the day before a dinner party then place them under the broiler to heat and crisp up. 5 large russet potatoes, peeled , cut in cubes 3Tbsp butter 1/8 cup of heavy cream, more if needed 1/4 cup sour cream Chopped chives Boil potatoes until you can stick a fork in them. Drain Mash with a hand mixer add butter and heavy cream. Mix thoroughly, then add sour cream and chives. Mix in with mixer Turn Broiler on Spoon potatoes in pastry bag with rosette tip. You will need a cookie sheet lined with parchment. Squeeze potatoes and form rosette...

Make Your Own Pizza

Image
Make your own Pizza It is important to use a pizza pan with the holes in the bottom to let the air flow through and makes the crust crispy for a thin crust pizza. You can use herb or citrus infused olive oil. I use store bought Pillsbury premed pizza dough or Wewalka classic style pizza dough. Whatever makes it easier for you.  You can also make your own yeast pizza dough. I also used a premade pizza sauce in a squeezable bottle.  You can also use pasta sauce chunky or smooth.  I have used many kinds of this.  Ragu, Prego Kroger. 1 pizza steel pan 1 premade or make your own dough Pizza sauce Mozzarella Cheese grated, large grate Sliced fresh garlic Pepperoni-deli sliced Salami Linguica Sausage Bell peppers thinly sliced Red Onion thinly sliced Mushrooms Black Olives sliced Green Olives sliced Scallions or Shallots Preheat the oven according to the package directions for the dough. You can choose any or all of the above condiments to put on yo...

Bacon-Peanut Butter Corn Muffins

Image
Bacon-Peanut Butter Corn Muffins I would use bacon you have to cook as the grease would be good to drip in the batter to give it more flavor. You can also use the bacon that is precooked just doesn't have as much flavor as you would be getting from the bacon that you cooked with all the juices and grease. It is easier to use however. I used the mini food processor to chop my peanuts. I am all about easy on work but not on the flavor. Sometimes I have to work hard to get that perfect taste. I used gluten free muffin mix. I liked Reese's peanut butter chips, lets face it they have been doing sweetened peanut butter for a while. You can use ramekins and make it a larger dessert.  I liked the muffin tins as that is all I can eat for a dessert and the caramel flows better over the muffin vs ramekin. 6 Tbsp butter softened 1/2 cup dry roasted or salted peanuts chopped 6-7 pieces of bacon either fully cooked or precooked chopped 1-2 Tbsp light/dark brown sugar 1 8oz box o...

Stuffed Top Sirloin/Top Round Steak

Image
Stuffed Top Sirloin/Top Round Steak This is easy enough to do after work and still have dinner on the table at a decent hour. While the kids are doing their homework or projects, you can fix this fabulous meal for your family and they will be so amazed at your skills. I used 5 top round steaks, you can use a large Top Sirloin and then just slice 2 pieces per person.   Easy to freeze, if there is any left to freeze. This meal is so "fancy" your guests or family will think you have been in the kitchen for days. I did the smaller version for my small family of 2.  You will want to make enough sauce to pour over the steaks and extra for dipping bites. I didn't add the spinach to the steaks I made. I buy the paste in a tube as once you open a can you need to scoop out and freeze or store in the refrigerator if using more in the week. 1 beef top sirloin/top round 2lbs or enough to feed a few  8-16 oz jarred Roasted Red/Yellow Peppers 1 pkg 10...
