Loaded Potato Bites
Loaded Potato Bites. You can either bake them once you make them into a ball or you can deep fry them. You want them to be slightly crunchy. If it is summer time, deep frying would be a better option so you don't heat up your house and your air conditioner comes on and then your electric bill goes up. I would fry in a good vegetable oil. I use pure corn or pure canola oil. Baking is the healthiest option but lets be real these are "Loaded" potatoes.
They are something that kids will love to eat verses a pile of mashed potatoes.
I used Oscar Meyer precooked bacon, you can definitely cook your own bacon to a soft crispy texture in the oven or microwave, griddle, or cast iron skillet. The cheese needs to be finely shredded so it will mix well with the potatoes, you can use a 3 cheese blend or a cheese of your choice. You could even use blue cheese, you would need to cut the sour cream in 1/2 as blue cheese is a soft cheese, this cheese does not melt easily.
1 pkg Ore-Ida shredded potatoes (hash browns) thawed
6 slices of bacon ,torn into small pieces
1 egg
1 cup of fine shredded sharp cheddar cheese
1/2 cup sour cream
3-5 green onions sliced
Garlic Pepper or just regular salt and pepper
Bread crumbs if deep frying
Set Oven to 425 degrees or Your oil should reach 325 degrees if frying , use a thermometer to check the temp. If baking, Line a cookie sheet with parchment paper. If deep frying then place paper towels under wire rack for draining.
Mix all ingredients in a bowl except for the Bread Crumbs. Use a small cookie scoop to shape potatoes into balls. Set aside if deep frying or place on cookie sheet. Potato balls can be close together as they will no expand during the cooking process.
Bake for 20-25 minutes.
**Deep Frying-You will roll the balls into the bread crumbs, shaking off he excess crumbs. Place in deep fryer and rotate until all sides are browned. Drain on rack.
