Do you like Lasagna but hate to do all the layers and all the work of putting it together, then I have the answer for you!!!
How about Lasagna soup.  Baby it's cold outside. It is warm and comforting and cheesy like lasagna but not too much cheese so you can still watch your calories. Fresh ingredients is how you make it healthy. You can add spinach if that is how you normally make your lasagna, wait even if you don't usually you can still add it  It comes out a beautiful green and gives your soup that extra something.

Still your choice.  Definitely buy the Mafalda noodles, you won't have to break up regular size lasagna noodles.  They aren't as easy to break up as you think.  I broke a nail and almost bruised my thumb.

Make sure you keep to the directions and don't serve too soon. It needs to simmered a while to get that fabulous taste you know you want.  It smells so good like you are in an Italian home.

Ingredients
1/2 pound each Hot Sausage and Regular Sausage < I used Jimmy Dean
1 Tbsp butter
1 white onion diced
5 cloves garlic minced
1-2 Tbsp fresh Oregano
1-2 Tbsp fresh Rosemary chopped
1-2 Tbsp Thyme
1 can diced tomatoes
1 box of good Italian puree tomatoes  Pomi or Cento
4 Tbsp Tomato paste
1/2 box each of Chicken Bone Broth and Regular Broth, Swanson
water
1 box Mafalda noodles
1/4 cup Heavy Cream
16 oz package shredded mozzarella
Fresh grated or jar Parmesan cheese
Ricotta cheese

In a big dutch oven, preferably a le cruset, cook the sausage ,leave chunky don't break it up so much, in butter and a little olive oil, along with the onion, garlic, herbs.
Add tomatoes and tomato paste, mix well
Pour in broth bring to a boil and add noodles about 1/2  the box at first. Cook according to  the directions on the box of the noodles. If liquid evaporates a little then add some water.  It needs to be a soup consistency. If liquid needs to be added, add water.
When noodles are done then stir in cream, add mozzarella
Serve immediately, topping with ricotta and sprinkle with Parmesan
