Rosh Hashana Apple Cake
I loved being able to find out all the symbolism of the ingredients in the cake.  I have some friends that are Jewish.  The Olive Oil is for the New Year with new blessings.  The honey is to have a sweet New Year.  The apples is what they used to dip in the honey.

This cake takes very little flour 5 tablespoons is all. Can you believe it?  It comes out firm just like a light cake.

Think of different foods you can make and learn about the tradition of that food.  Be adventurous and explore the different regions and traditions.

The parchment paper makes the cake easy to remove from cake pan.

4 large apples, sliced thin
1 lemon, cut into wedges
5 Tbsp Flour
5 Tbsp Olive Oil
5 Tbsp Granulated Sugar
2 Eggs

2/3 cup raw honey
2 eggs

Heat Oven to 350 degrees.  Place apples in a circular motion on the bottom of round cake pan lined with parchment paper, squeeze lemon over the apples very light layer. If you don't have parchment you can use a cooking spray.
Mix the Olive oil and 2 eggs until well blended, then add the flour and sugar. Stir until all is blended and smooth, no lumps.  Pour the mixture over the apples and bake for 20 minutes.




Mix the honey and remaining eggs until smooth and well blended.  Remove cake from the oven and pour honey mixture over the cake and increase the heat to 400 degrees bake for 20 minutes more.
Remove from oven and serve warm or cold.
