Pork Chili Verde!! Yum right
Lots and Lots of Tomatillos and yes I got to use the grill. What more could a girl ask for.
I used Pork Loin for mine , so less fat. I bought four 2 pound individually wrapped , best way to buy so you can use exactly what you need or if you might have drop in guests.
I always make too much so I can freeze some and just pull out of the freezer on one of those days you just can't cook. Simple simple.
This is such an easy meal to make without much effort.
Pork Chili Verde
4lbs pork butt, loin, or shoulder, grilled
5 onions, mix white and yellow, grilled
1 bulb of sliced fresh garlic
Butter
5-6 pounds of tomatillos , grilled
1 large poblano pepper seeded and grilled
2-3 jalapeño peppers seeded and grilled
salt and pepper
1 Tbsp of coriander dried
1 Tbsp of Cumin
1 Tbsp oregano fresh or dried
1/2 tsp cayenne pepper
Grill all the vegetables rub all with olive oil and put in a grill pan with holes. Just enough to get grill marks on all. The peppers can be laid on the grill directly, just watch them.
Grill the pork at the same time directly on the grill. 10 minutes on both sides of 2 pound roasts.
Remove all after the vegetables and pork have been grilled.
Place the tomatillos in the food processor along with the spices and peppers. Rough chop the onions and place in your large pot, preferably enamel coated cast iron. Cut the pork in cubes and place in pot as well. Simmer for 1 1/2 hours or longer if it isn't the flavor you are looking for.
I used homemade cactus corn tortillas for the pork chili verde. I love using different flavored homemade tortillas. I usually buy them from a Mexican grocery store. disfrute de su comida
