Green pistachio wedding cookies dripping in a ganache icing. These cookies are really yummy and the chocolate frosting is so very good. Nice little treat after a big meal. It is not too sweet, it is just little bite. You don't have to color with green food coloring. That is up to you. You can make these anytime and not have to have them green. These would also be good for Easter and the icing can be done with white chocolate and dye just the icing.
These are good anytime. It can be a quick cookie you make after work as it takes no time at all to make and few ingredients.
1 cup softened butter
1/2 cup powdered sugar
2 tsp madagascar vanilla
2 1/4 cup flour
3/4 cup nuts
Powder sugar
For the icing you can make chocolate ganache or white chocolate icing or just roll in powered sugar.
1 cup of chocolate chips or white chocoate
1 cup of heavy cream
Heat oven to 400 degrees. Beat butter, powdered sugar, and vanilla in large bowl then add flour and mix.
Shape dough into balls place on ungreased cookie sheet
Bake 8-9 minutes or until set but not brown. Remove from oven and roll in powered sugar. Cool completely and then roll in powdered sugar again.
Tip: you can flavor with whatever you like, orange, lemon or any citrus peel and then add the juice as well. Or just add nuts.
