December 29, 2018  We are a grillin even though it is Winter time.  You can grill anytime, in fact it is better when it's cooler so you can stand by the grill longer without getting overheated.
I love grilling all the time, the food just has a better smell and taste.

I am going to talk about baked potatoes on the grill. Amazing right.  It is really great to do these in summer as you don't need to heat the oven and heat the entire house. Baked potatoes are delicious anytime of the year.  You can make extra and take one in your lunch.  They are pretty healthy as long as you don't add butter, sour cream etc.

4-6 medium red, yellow or gold potatoes
Sliced Mushrooms, white or cremini  about 1/4 inch thick as any thinner and they loose their texture and taste
Sliced Red Onions about 1/4 inch thick as well
Soften Butter
Chopped chives or green onions



Heat gas grill to high.
Tear off 4-6 pieces of heavy duty tin foil and stack. Slice 1 potato at a time. See picture below. Take a piece of tin foil and smear some butter in the middle of the piece of tin foil and lay the sliced potato on top of the butter.  You will insert, alternating mushrooms and red onion in the slices. Smear more butter on the top of the potato.  Roll the tin foil around the potato and seal the two ends.  Continue with all potatoes.
Place the potatoes on the grill toward the back and spread out.  Cook for 15-20 minutes and check by squeezing the sides of the slices, leave wrapped.  If not quite done turn over and cook another 15 minutes, you need to turn so they don't burn on the bottom.
Remove when you can lightly squeeze and the potato squishes.  You can add chives/green onion over the top.  You can also sprinkle cooked bacon pieces and some grated cheese.  Depends on how many calories you are willing to take on.
