Wild Rice with Cranberry and Orange

1 Pkg Uncle Bens Wild Rice(ready to heat and serve)
1 medium onion chopped
1 pkg 4-6 oz sliced mushrooms, white, crimini, or baby bellas
1 1/2 cups of Chicken Broth  or less (use 3/4 cup of orange and minus that amount of chicken broth) if you want a little Christmas taste/smell)
2 cloves of garlic chopped
1 cup dried cranberries, don't use fresh cranberries(way too tart)

Heat oven 350 degrees.  Spray baking dish, 8x8x2 with cooking spray.

Melt butter add onion and mushrooms, when onion is soft add the garlic and cook 1-2 minutes until fragrant.  Mix in prepared rice and just enough broth to broth/orange juice to cover rice no extra as rice is already cooked. Stir and pour into prepared dish. Bake Covered  40 minutes then add cranberries and cover and bake for another 10 minutes. Serve warm with BBQ chicken right off the outside grill. You can grill anytime.  You can make your own BBQ sauce and make it more Fall flavors. You can also use the asian sauces that we made a couple of weeks ago, the garlic on top and the Hoisin like sauce to dip on the side of your BBQ chicken breast.  Both are good.
